Shahi Veg Biryani: For400 gm. basmati rice, chopped 5-6 beans, 100 gm. carrot and peas, 100 gm. cauliflower florets, 1 cup onions and 1 potato.

  • Add 1 ¼ tbsp. salt, 1 tbsp.cooking oil, 1 tbsp. lemon juice, 2 green cardamoms, 2 cloves, 1-inch cinnamon, 1 bay leaf and ½ tbsp. shahi jeera in boiling water. Add the soaked rice and cook till 90% done. Strain extra water.
  • Heat 4 tbsp. ghee. Add 1 bay leaf, 1-star anise, 4 cloves and cardamom, 1-inch cinnamon, ½ tbsp. shahi jeera. Sauté ginger garlic paste and green chillies till slightly brown. Add the chopped vegetables and cook till tender. Add 1 tbsp. red chilli powder, 1 ½ tbsp.ShahiVeg Biryani Masala, ½ tbsp. turmeric and salt and 1 cup fresh yoghurt
  • Now in another heavy bottom pan, layer the boiled rice over the veg curry, pour saffron-infused milk and sprinkle chopped coriander and mint leaves.
  • Seal the pot with aluminium foil or thick moist cloth so no steam evaporates. Cook for 12 min on the lowest heat. Garnish with fried cashews and raisins.
