Butter Chicken: Take 800 gm. of bone-in or boneless chicken. Marinate with 1 lemon juice, chilli powder, a little salt, 1 cup fresh yoghurt, ginger garlic paste, ¼ tbsp. turmeric and 2 tbsp. cooking oil. After 2 hours, grill the chicken on Tawa or griller till the pieces turn lightly golden.

 

For the gravy, heat 60 gm. butter in a pan, add some cinnamon sticks, 6-8 cloves and 6-8 green cardamom (all slightly crushed). Add ginger garlic paste, and 2 slit green chillies. Sauté well.

Add tomato puree; degi mirch powder for colour, ½ tsp. sugar and salt. Cook till the masala leaves the pan. Pour 1 cup water with the cashew paste of 10-12 soaked cashews. Simmer for 3-4 min. Add chicken, 1 ¼ tbsp. Butter Chicken Masala, and cook till chicken is tender. Lastly, add chilled cream and crushed Kasuri methi.

Serve hot with rice or bread of your choice.
