  • Chicken/Mutton Biryani- Take 800 gm. chicken (boneless/ with bone). Marinate with 3 tsp. plain fresh yoghurt, 1 ¼ tbsp. ginger garlic paste, ½ salt, ¼ turmeric, ½ tsp. red chilli powder, 1 tsp. lemon juice(optional) and ½ tsp. DumBiryani Masala.

Soak 2 cups of basmati rice for 30 min and then boil it with salt and oil till it is 90% cooked.

Heat ghee or cooking oil in a heavy bottom pan. Add whole spices, bay leaf, green cardamom, cinnamon, cloves and thinly sliced onions, and fry till light brown. Add marinated chicken, ½ tsp. Dum Biryani Masala and sauté for 5 min. Lower the flame completely, cover and cook till the chicken is soft and tender.

In a Deguchi, put in little cooking oil, and add 2-3 shallow fried half-cut potatoes, at the bottom. Then spread 1 layer of rice, on that evenly spread chicken, and then another layer of rice topped with chicken. On top sprinkle the soaked saffron milk and brown onions. Cover the lid tightly so that no steam escapes, lower the flame to the lowest and let it simmer for 10 min. make sure the bottom is not getting burnt.

Serve hot with green chutney, salad and curd.
