Shahi Paneer Masala: For 250 gm. Paneer, take 2 onions, 1 tbsp. ginger-garlic paste,  green chilli, 1-inch cinnamon, and 4 green cardamoms in a saucepan. Cook in 1/3 cup of water till onions are soft.

  • Make a paste of 12-15 cashews; grind the cooked onions with the spices to a fine paste.
  • Heat ghee or unsalted butter; add onion paste, cook till it becomes thick, and add tomato puree and salt, red chilli powder, coriander powder, and black pepper powder.
  • Mix cashew paste, water, and ½ tbsp. sugar. Add 1 tbsp. Shahi Paneer Masala and Kasuri methi. Add paneer cubes and simmer for 1-2 min. Finally, add saffron cream mixture (saffron strands mixed in cream) and let it come to a simmer. Stir well and it is ready to serve.
